Nicole- That is great you are juicing! I love to juice a whole bunch of kale with whatever else I'm doing (so high in minerals and protein). Also cucumber is really good for the skin so throw that in, too. Lemon is a nice complimentary flavor to all the greens (and great for cleansing the liver) but if you want to juice the peel, too only do that if it's organic lemons.

Tracy - Transitioning from a cooked vegan diet to a raw one is not that hard at all. Even if you go just 50% raw, eventually you start craving more raw foods everyday. Add a salad or more raw fruits with each meal or as snacks and then if you have a juicer or blender, start doing that and add superfoods to the drinks like raw, unfiltered honey, dried goji berries (great in salads), blueberries, acai berry (frozen fruit make the smoothie thicker). One of my favorite raw recipes is spagetti because you can whip up all different kinds of sauces for it and it's quick and delicious and filling. I am doing my next garden post on this so check it out for a recipe!

I have been vegan for years but have only gone through spurts of going raw. You are so right, I always feel best when I am mostly raw and your body does have a way of telling you just what you need. Do you have a favorite raw recipe? I'd like to incorporate more raw meals into my life but for some reason lack the creativity when it comes to not-cooking. :c) Thanks for sharing your experience, it is inspiring.

Good for you! At this point my body tells me that I need junk food ;) I know, I know, I shouldn't give it the option!

I now have a juicer! I picked it up on Craigslist last week. Probably not the fanciest juicer ever, but it was $15 and I like it. I'm afraid to juice fruits bco blood sugar issues, but am loving the veggie juices! Good sub for caffeine.
